- ¾ cup mashed potatoes
- ½ tsp salt
- 2 lbs confection sugar
- 1 stick butter
- ½ lb coconut
- 1 12-oz pkg chocolate bits
- 4 squares un-sweetened chocolate
- ½ cake paraffin (2 ½ x 2 ½-inches)
Peel and cook potatoes, mash with no seasoning. Add salt. Using a double boiler, place stick of margarine in and melt over boiling water. Add mashed potato, confection sugar, coconut and vanilla. Mix well, then turn into a jelly roll pan. Spread evenly with a spatula. Place in a cool place to harden. When hard cut into small squares and dip in chocolate mixture.
Use double boiler. Place paraffin in top over boiling water to melt. Then add the two kinds of chocolate, allow to melt. Stir well to mix ingredients. Using a toothpick inserted into square of need ham, dip each into chocolate, lift from chocolate and hold above the mixture until the excess has dripped back into the pan. Place on waxed paper to harden.
